Simple Heirloom Tomato Salad
- 3 Tablespoons Extra Virgin Olive Oil
- 1-1/2 Tablespoon Red Wine Vinegar
- 1 teaspoon Fresh Garlic, Grated Or Pressed
- 1 pinch Sugar
- 1/2 teaspoons Dried Tarragon
- 1/4 teaspoons Salt And Pepper, Or To Taste
- 1 pound Heirloom Cherry Tomatoes, Halved
- 2 teaspoons Fresh Basil Leaves, Sliced Thinly
- Optional Garnish: Crumbled Feta Cheese
- In a small mixing bowl, whisk the olive oil, vinegar, garlic, a pinch of sugar, and dried tarragon until incorporated. Season the vinaigrette well with salt and pepper. Toss the vinaigrette gently with the halved cherry tomatoes and fresh basil leaves. Let sit at room temperature for 15-30 minutes to allow the flavors to meld.
