Blueberry Buttermilk Scones
- 2 cups All-purpose Flour
- 1 cup Whole Wheat Flour
- 1 Tablespoon Baking Powder
- 1 teaspoon Baking Soda
- 1/3 cups Sugar
- 1 teaspoon Ground Cinnamon
- 1/2 cups Butter
- 1 cup Blueberries
- 1 whole Egg
- 1 cup Buttermilk
- 1 Tablespoon Natural (or Regular) Sugar
- Preheat oven to 375 degrees. In a mixing bowl, combine flours, baking powder, baking soda, sugar and cinnamon. Cut in butter with a fork. Add blueberries. In a separate bowl, beat egg and buttermilk together and gently fold into flour and blueberry mixture, just until it starts to combine. Mixture will be crumbly.
- Pour onto a cutting board or other surface and gently knead together. Divide in half and gently pat into two circles. Cut into wedges and place on a greased or lined baking sheet. Sprinkle with sugar and bake for 25-30 minutes or until lightly browned.
