Simple Tomato Basil Soup
- 3 Tablespoons Butter
- 2 Tablespoons Extra Virgin Olive Oil
- 1 Medium Onion, Finely Chopped
- 1/2 Tablespoons Or 2-3 Cloves, Chopped Garlic
- 1 can (26 Oz. Size) Crushed Tomatoes
- 1 can (10.75 Oz. Size) Tomato Soup
- 2 cans (8 Oz. Size) Pizza Sauce
- 1 can (8 Oz. Size) Tomato Sauce
- 3 cups Warm Water
- 1-1/2 Tablespoon Chicken Soup Base, Such As Better Than Bouillon
- 6 leaves Basil Finely Chopped
- 1/2 teaspoons Dried Oregano
- 1/2 cups Grated Parmesan Cheese
- 2 Tablespoons Brown Sugar
- Black Pepper To Taste
- 2 Bay Leaves
- Heat an 8-quart Dutch oven or soup pot over medium high heat. Add butter and extra virgin olive oil. Add the onion and cook till soft, 5-10 minutes. Add garlic and cook till fragrant, 1-2 minutes. Add the remaining ingredients (except bay leaves) and mix well. Add bay leaves and bring to a boil. After a boil is reached, turn down heat to a simmer and cover pot. Simmer for 30 minutes. Remove bay leaves and serve.
