Basic Corn Bread

  1. Heat oven to 350u0b0.
  2. Sift together corn meal, flour, baking soda, baking powder, salt and pepper.
  3. Combine egg and buttermilk; add dry ingredients and stir to combine.
  4. Heat butter in a 10-inch ovenproof skillet over moderate heat until bubbly.
  5. Tilt to coat the pan; pour in the batter.
  6. Cook bread on stove for about 3 minutes to give it a good crust.
  7. Put the skillet in the oven to bake until a toothpick inserted in the center comes out clean, 20 to 25 minutes.
  8. Turn the corn bread out on a rack so it doesn't get soggy as it cools.
