Cornish Game Hens With Rice And Vegetables
- 4 Cornish game hens
- olive oil
- 1 Tbsp. fresh thyme
- ground black pepper
- 1/3 c. parsley or 2 tsp. dried parsley
- 1 c. diced mushrooms
- 2 small zucchini, diced
- 1 c. rice
- 2 c. chicken stock
- 2 small bay leaves
- Preheat oven to 350u0b0.
- Rub hens with olive oil, thyme, salt and pepper.
- Place in an oiled roaster. Cover and put in the oven. After 30 minutes, add the parsley, mushrooms and zucchini to the pan drippings and stir to coat. Cover and return to oven for 5 minutes. Add rice, 2 cups of stock or water and bay leaves.
- Add additional salt and pepper to season rice, if needed.
- Continue baking for about 30 minutes more.
- Hens are done when golden brown and the wings separate from the body. Remove hens and rice to serving platter and garnish with fresh parsley. Serves 8.
