Easter Chewy Chocolate Oat Square
- 3/4 cups Coconut Oil, At Room Temperature (should Be The Consistency Of Softened Butter, Not Melted)
- 1 cup Packed Brown Sugar
- 1-1/3 cup Plus 1 Tablespoon, Whole Wheat Pastry Flour
- 1-2/3 cup Old Fashioned Oats
- 1/2 teaspoons Baking Soda
- 1/2 teaspoons Salt
- 4 cups Marshmallow Bunnies (or Regular Marshmallows), Or More As Desired
- 1-1/2 cup White Chocolate Chips
- 1. Preheat your oven to 375 F and spray a 9x13 inch baking pan with cooking spray. Set aside.
- 2. In a large mixing bowl using an electric hand mixer, cream together the coconut oil and brown sugar until smooth.
- 3. Stir in the flour, oats, baking soda and salt and mix until well combined.
- 4. Set aside about 11/3 cup of the crumbs and press the rest of the crumbs into the bottom of the prepared baking pan.
- 5. Sprinkle the marshmallows and chocolate chips over the pressed crust.
- 6. Top with the remaining crumb mixture and bake for 20-25 minutes, or until the marshmallows are just turning golden.
- 7. Let the bars cool in their pan before cutting, or else they won't set and will be a a lumpy mess.
