Olive, Serrano Ham And Cheese Loaf
- 3 whole Eggs
- 6 tablespoons, 2 teaspoons, 4-5/8 pinches Extra Virgin Olive Oil
- 1/2 pounds, 7/8 ounces, weight All-purpose Flour
- 1 dash Salt And Black Pepper
- 1-7/8 ounces, weight Black Olives, Pitted And Halved
- 3-5/8 ounces, weight Grated Mozzarella Cheese
- 3 slices Serrano Ham Or Prosciutto (thin, Deli Slices), Diced
- 1 Tablespoon Extra Virgin Olive Oil For Drizzling
- Preheat the oven to 200u0b0C. Grease a standard size loaf tin and line the pan with parchment paper so that the paper hangs over the long sides of the pan.
- In a small bowl bowl, whisk the eggs and 100 ml of olive oil. Set aside.
- Combine the flour with the rest of the ingredients in a large bowl (don't include the final olive oil amount-this is for drizzling on top of the loaf). Make a well in the center of the flour mixture, then tip in the egg mixture. Mix quickly but thoroughly to form a thick batter.
- Spoon batter into the tin and smooth the top with a large metal spoon. Drizzle the olive oil over the top. Bake the loaf for 30 minutes or until a skewer inserted in the middle comes out clean. Remove from oven. Turn it out of the pan onto a cake cooling rack. The outside is not very attractive but the inside is great!.
- If you want, you can serve this loaf with some tomato sauce and some additional virgin olive oil.
