Lucky Salad
- 4 cups Black-eyed Peas Cooked And Drained
- 1 cup Corn, Thawed Or Drained
- 1 whole Large Carrot, Shredded
- 4 whole Green Onions, Sliced
- 1 whole Red Bell Pepper, Diced
- 1/2 cups Olive Oil
- 1/3 cups Red Wine Vinegar
- 1/2 teaspoons Salt
- 1-1/2 teaspoon Sugar
- 1 clove Garlic, Minced
- 1 teaspoon Italian Seasoning
- 1/2 teaspoons Ground Cumin
- 2 whole Tomatoes, Diced
- 1. Combine the vegetables, except the tomatoes, in a large bowl and set aside.
- 2. Combine the oil, wine vinegar and seasonings, stirring till sugar and salt are dissolved.
- 3. Pour the dressing over the salad, mix well, and refrigerate for a couple of hours.
- 4. Just before serving, add the tomatoes and stir everything together again.
