Cherries In The Snow

  1. Cream together:
  2. One 8-ounce package Cream Cheese (not soft or whipped)
  3. 1 Cup Confectioner's Sugar
  4. Separately, whip together:
  5. 1 Cup cold Milk
  6. 2 envelopes Dream Whip
  7. 1 teaspoon Vanilla
  8. (1) Mix the cream cheese mixture and the Dream Whip mixture together, and spread half of this mixture in a large glass dish - you will want to see the layers.
  9. (2) By hand, tear off bite sized pieces of the angel food cake and drop on top of the mixture until the first layer of filling is completely covered. (Try to use only the white part of the cake, but if you must use some of the brown, crusty edge, try and place that close to the center and not near the edge of the glass dish.) Next, spread remainder of the cream cheese/Dream Whip mixture over the layer of angel food cake.
  10. (3) Chill for at least 30 minutes.
  11. (4) Finally, carefully spread cherry pie filling on top, making sure not to "mix" the red into the white. Don't worry if some of the "snow" shows through between areas of cherries - that adds to the visual presentation.
  12. (5) Chill well - overnight if possible, as the cake will absorb some of the mixture and become very moist - in fact, the longer it sits, the moister it gets!
  13. **Here is an alternate fancy presentation/method that is beautiful!! Instead of using a flat rectangular dish, I use a trifle dish. After the mixture is ready, I cover the bottom of the trifle dish with a layer of Angel Food Cake; next comes a layer of the cream cheese mixture, and then a layer of the cherry pie filling. Continue to repeat layers in that order until you get even with (or just below) the top of the trifle dish - always ending with the "Cherries in the Snow". **
  14. NOTE: This can be made up to 2 days in advance of when you want to serve it.
