Simple Chocolate Mousse Pie

  1. Begin by placing a mixing bowl and beaters in the freezer to chill.
  2. Over a double boiler, combine the chocolate chips, butter, and vanilla. Melt, stirring until smooth. Remove from the heat, set aside, and let cool. Once the chocolate mixture has cooled, begin making the whipped cream by beating the cream on high until stiff peaks begin to form. Fold the cooled chocolate mixture into the whipped cream by thirds. You may have a few white streaks in the mousse and that is fine. You don't want to overwork the mousse. Pour the mousse into your prepared pie crust. Cover and let chill in the refrigerator for 4 hours or until set. Garnish with fruit.
  3. Presentation tip: You may want to spoon the mousse into martini glasses instead of a pie crust. Garnish with fruit.
