Shrimp Creole
- 3/4 c. onion, chopped (1 medium)
- 1 green pepper, finely chopped
- 1/2 c. celery, finely chopped
- 2 Tbsp. butter
- 1 (8 oz.) can tomato sauce
- 1 Tbsp. sugar (optional)
- 1/2 c. water
- 1 tsp. fresh parsley, minced
- 1/2 tsp. salt
- 1/8 tsp. (scant) cayenne pepper
- 1 (7 oz.) pkg. frozen shrimp, thawed
- fluffy rice
- In a skillet, saute onion, pepper and celery in butter until tender, about 10 minutes.
- Remove from heat and stir in tomato sauce, water, parsley, salt and pepper.
- Simmer 10 minutes.
- Add more water if needed.
- Add thawed shrimp.
- Bring mixture to a boil. Cook, covered, over medium heat for 5 minutes.
- Serve Shrimp Creole over fluffy rice (your own recipe).
- This recipe is for 2 generous servings.
