Slow Cooker Minestrone Soup
- 3 whole Carrots, Diced
- 2 whole Zucchinis, Cut Up
- 1 whole Onion, Diced
- 3 whole Celery Sticks, Chopped
- 1 cup Green Beans
- 3 cloves Garlic, Minced
- 1 can 10 Oz. Of Garbanzo Beans
- 1 pound Cooked Lentils
- 1 can 28 Oz. Of Tomatoes
- 4 cups Vegetable Broth
- 1 teaspoon Curry
- 1/2 teaspoons Cumin
- 1/2 teaspoons Garam Masala
- 1/2 teaspoons Salt
- 1/4 teaspoons Pepper
- 6 ounces, weight Cooked Noodles
- Add all the ingredients to your slow cooker with the exception of the cooked noodles.
- Cook on high for 3-4 hours or low for 4-6 hours. Add in your cooked noodles just before serving.
- Note: Veggie and bean choices are flexible with this dish! Use whatever you have on hand and it will be delicious!
