Peanut Butter Cup Rice Krispies Treats
- FOR THE RICE KRISPIES TREATS:
- 2 Tablespoons Unsalted Butter
- 10 ounces, weight Marshmallows
- 1/2 cups Peanut Butter
- 5 cups Rice Krispies Cereal
- FOR THE TOPPING:
- 1/3 cups Butterscotch Chips
- 2/3 cups Semi-Sweet Chocolate Chips
- 1 Tablespoon Peanut Butter
- 1 cup Chopped Peanut Butter Cups
- For the Rice Krispies treats:
- In a large pan, melt the butter. Add the marshmallows and stir over low heat, until completely melted. Remove from the heat and stir in the peanut butter.
- Immediately add the Rice Krispies and stir until thoroughly combined. Pour the mixture into a greased 8x8 pan. Press down lightly, to even out the top. Allow the mixture to firm up and cool at room temperature before preparing the topping.
- For the topping:
- In a double boiler, melt the butterscotch chips, chocolate chips, and peanut butter. Stir until completely smooth. Pour over the top of the Rice Krispies treats, using a spatula to evenly spread it.
- Allow the topping to cool just slightly, then top with chopped peanut butter cups. Give the topping a couple hours to firm up before cutting and serving.
