Oatmeal Pancakes With Blueberry Banana Sauce
- FOR THE PANCAKES:
- 1-1/2 cup Quick Oats
- 1 Tablespoon Baking Powder
- 1/2 teaspoons Salt
- 1/2 teaspoons Cinnamon
- 1/2 cups Whole Wheat Flour
- 1/2 cups White Flour
- 1 Tablespoon Brown Sugar
- 2 cups Milk
- 2 whole Eggs, Lightly Beaten
- 1/2 cups Applesauce
- 2 Tablespoons Canola Oil

- FOR THE SAUCE:
- 1 whole Banana, Sliced
- 1 cup Blueberries
- 1/2 teaspoons Vanilla
- 1/2 teaspoons Cinnamon
- 1 Tablespoon Water Or Juice
- 2 Tablespoons Maple Syrup
- Pancakes:
- Combine oats, baking powder, salt, cinnamon, flours, and sugar. Add milk, eggs, applesauce and oil. Mix well. Pour onto a hot griddle and flip when bubbles start to form on the top of the batter. Cook until golden.
- Sauce:
- Combine banana, blueberries, vanilla, cinnamon, water or juice, and syrup in a saucepan and heat over medium heat until thickened. Serve over pancakes.
