Flax Bran Muffins

  1. 1. Preheat oven to 350u0b0F.
  2. 2. Mix together dry ingredients in a large bowl.
  3. 3. Stir in carrots, apples, raisins, and nuts.
  4. 4. Combine milk, beaten eggs, and vanilla.
  5. 5. Pour liquid into dry ingredients and stir until ingredients are moistened (DO NOT OVER MIX).
  6. 6. Gently stir in blueberries.
  7. 7. Fill muffin cups with an ice cream scoop.
  8. 8. Bake for 20 minutes for large muffins, and 10 minutes for mini muffins (may take longer depending on how juicy your apples are).
