Flax Bran Muffins
- 1-1/2 cup Unbleached White Flour
- 3/4 cups Flax Seed Meal
- 3/4 cups Oat Bran Cereal
- 1 cup Brown Sugar
- 2 teaspoons Baking Soda
- 1 teaspoon Baking Powder
- 1/2 teaspoons Salt
- 2 teaspoons Cinnamon
- 1/2 teaspoons Cardamom
- 1-1/2 cup Carrot, Finely Shredded
- 2 whole Apples, Peeled And Shredded
- 1/2 cups Rasins Or Dried Cranberries (optional)
- 1/2 cups Nuts, Chopped
- 3/4 cups Milk
- 2 whole Eggs, Beaten
- 1 teaspoon Vanilla Extract
- 1/2 cups Blueberries (optional)
- 1. Preheat oven to 350u0b0F.
- 2. Mix together dry ingredients in a large bowl.
- 3. Stir in carrots, apples, raisins, and nuts.
- 4. Combine milk, beaten eggs, and vanilla.
- 5. Pour liquid into dry ingredients and stir until ingredients are moistened (DO NOT OVER MIX).
- 6. Gently stir in blueberries.
- 7. Fill muffin cups with an ice cream scoop.
- 8. Bake for 20 minutes for large muffins, and 10 minutes for mini muffins (may take longer depending on how juicy your apples are).
