Bacon And Scallion New Potatoes
- 2 pounds, 3-1/3 ounces, weight New Potatoes, Washed And Scrubbed
- 1 Tablespoon Olive Oil, Plus More To Glaze Cooked Potatoes
- 1/2 pounds, 2-5/8 ounces, weight Streaky Bacon, Chopped Into Small Pieces
- 6 stalks Scallions, Sliced Finely
- 1 Tablespoon White Wine Vinegar
- 1/2 Tablespoons Whole Grain Mustard
- Salt And Pepper, to taste
- Although I indicated that this recipe serves 4, it will also comfortably serve 6.
- Start by boiling the potatoes in a large saucepan for 20-25 minutes or until tender. While the potatoes are boiling, in a separate pan, heat oil on medium heat. Add the bacon and cook until brown and crispy. Next, add the sliced scallions and cook for a further 3-5 minutes. Add the white wine vinegar and whole grain mustard and combine thoroughly. Remove from heat and set aside.
- Once the potatoes are boiled, drain and cut in half. Transfer back to the saucepan and add bacon and scallions. Mix thoroughly but carefully, making sure not to 'mash' the potatoes.
- Put potatoes, bacon and scallions into a large dish and using a pastry brush, glaze with olive oil. Season with salt and plenty of pepper and place in the oven on 375 degrees/Gas Mark 5 for 20-25 minutes or until golden.
- Delicious served alongside chicken and green beans.
