Homemade Minestrone
- 1 (11 oz.) can kidney beans
- 1 tsp. salt
- 1 large clove garlic
- 1/4 tsp. ground pepper
- 1 Tbsp. olive oil
- 3 Tbsp. butter
- 1 (14 oz.) can crushed tomatoes or puree
- 1/2 c. white wine
- 1/4 lb. small shell pasta
- 2 1/2 c. water
- 1 small carrot, diced
- 2 green onions, chopped
- 2 stalks celery, chopped
- 1 small, unpeeled zucchini, cut in cubes
- 4 or 5 leaves Swiss chard or romaine, chopped
- 1/4 c. chopped parsley
- Cook beans, salt, garlic, pepper, oil, butter, water and tomatoes over low flame, stir.
- Prepare vegetables and add to pot. Cover and simmer 1 hour.
- Add wine and pasta.
- Simmer 10 or 15 minutes.
- Serve.
- Makes 10 servings.
