Breaded Okra With Cream Sauce

  1. Preheat oven to 400 F.
  2. Rinse fresh okra and cut into 2" pieces. In a large pot of boiling water cook okra for 10 minutes. Then drain it in a colander and set aside to cool down.
  3. Beat the eggs in a large mixing bowl and add the pieces of okra. Coat well with egg wash.
  4. Onto a plate add plain breadcrumbs. Roll okra pieces in the breadcrumbs getting a nice coating on the pieces.
  5. Into a 9 x 12 non-stick baking dish (or use cooking spray to coat a regular baking dish) add breaded okra in a single layer.
  6. In a small bowl add finely diced onion, black pepper, butter, oil and Parmesan cheese. Mix with a spatula. Sprinkle mixture to cover breaded okra in the baking dish. Add vegetable stock into the dish.
  7. Bake uncovered for 15 minutes at 400 F.
  8. For the sauce: In a mixing bowl, add sour cream, milk, mayonnaise, parsley and thyme. Stir well and refrigerate until serving.
  9. Serve cold sauce with the okra and enjoy!
