Chicken Gumbo
- 1 frying chicken
- 5 slices bacon
- flour
- 2 qt. cold water
- 1 c. sliced okra
- 2 c. tomatoes
- 1/2 c. corn
- 1 c. Irish potatoes, cubed
- 1 small onion, diced
- 2 egg whites for each c. of stock
- 1/3 c. water
- 1 qt. boiling water
- Cut a chicken for frying and fry out bacon slices.
- Remove bacon.
- Dredge chicken with flour; saute in bacon grease.
- Put 2 quarts cold water in soup kettle with sliced okra, tomatoes, corn, potatoes (cubed) and diced onion.
- Boil all together until done. Pour 1 quart boiling water over chicken and boil until meat falls off bone.
- Remove chicken; chop fine and add water in which it was cooked and chopped chicken to the vegetables.
- Thicken, season and serve.
