Jim'S Minestrone Soup
- 1 c. each: garbanzo, pinto, kidney, cranberry, navy and Great Northern beans
- 1/2 c. each: lentils, barley and split peas
- 3 large cans whole tomatoes, quartered
- 2 large cans tomato sauce
- 3 chopped onions
- 4 mashed, sieved garlic cloves
- 1 1/2 lb. lean cubed salt pork
- 1/2 c. chopped green peppers
- 1/2 c. chopped celery
- 1/4 c. dried parsley
- 1 tsp. oregano
- 1 tsp. basil
- 1 tsp. Cajun seasoning
- 1/2 tsp. Old Bay seasoning
- 1/2 tsp. salt
- 1/2 tsp. pepper
- few shakes hot sauce
- hot pepper flakes to taste
- 1 or 2 cubed potatoes
- You will need a water-filled cauldron.
