Gayle'S Oat Bran Applesauce Muffins(12 Muffins)
- 1 c. whole wheat flour
- 1/2 c. oat bran
- 2 Tbsp. fructose
- 1/4 c. wheat germ
- 1/2 tsp. soda
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/8 tsp. each: cloves, nutmeg and allspice
- 1/2 tsp. cinnamon
- 2 Tbsp. melted butter
- 2 Tbsp. oil
- 1/2 c. unsweetened applesauce
- 1/2 c. buttermilk
- 1 beaten egg
- 1/2 tsp. vanilla
- Combine wheat flour, oat bran, fructose, wheat germ, soda, baking powder, salt, cloves, nutmeg, allspice and cinnamon together.
- Mix butter, oil, applesauce, buttermilk, egg and vanilla in mixture well.
- Let stand 5 minutes.
- Fill greased and floured muffin tins (paper cupcake liners may be used in muffin tins).
- Also, if you don't have muffin tins, place cupcake liners in a 2-inch deep pan before filling.
- Bake at 350u0b0 for 20 minutes, until lightly browned.
- May be frozen.
