Tortilla Soup
- 1 chopped onion
- 1 (4 oz.) can drained, chopped green chiles
- 3 cloves minced garlic
- 2 Tbsp. olive or vegetable oil
- 1 c. peeled, chopped tomatoes
- 1 (10 1/2 oz.) can beef consomme
- 1 (10 1/2 oz.) can chicken broth
- 2 1/4 c. water
- 3/4 c. tomato sauce
- 1 tsp. ground cumin
- 2 tsp. Worcestershire sauce
- 1 Tbsp. steak sauce
- 1 tsp. chili powder
- 1 tsp. salt
- 1/8 tsp. pepper
- 1/2 green and 1/2 red pepper, chopped
- 3 handfuls corn tortilla chips
- 1/4 c. shredded Monterey Jack cheese
- Saute onion, chiles, garlic and peppers in oil until soft. Add tomatoes, consomme, broth, water, tomato sauce, chili powder, salt, pepper, Worcestershire and steak sauce.
- Bring soup to a boil, lower heat to simmer and cook, covered, for 1 hour.
- Add tortillas and cheese and simmer 10 minutes more.
