Smoky White Bean Chili With Pork
- 1 pound Ground Pork (I Used The "hot" Variety)
- 1 whole Red Onion, Chopped
- 2 cloves Garlic, Minced
- 2 teaspoons Ground Cumin
- 1 Tablespoon Smoked Spanish Paprika
- 2 teaspoons Chili Powder
- 1/2 teaspoons Each, Salt And Pepper
- 1/3 cups Red Wine
- 2 cans (14 Oz. Size) Fire Roasted Tomatoes With Garlic
- 2 cans (14 Oz. Size) White Beans
- 1 can (14 Oz. Size) Hominy
- Sour Cream For Garnish
- 1. Brown meat in a large pot; when done, drain excess fat.
- 2. Add onions and garlic to the pork and saute over medium-high heat until translucent (about 3 minutes).
- 3. Add seasonings and saute for 1 minute. Add red wine and cook for another 5 minutes. Add tomatoes, beans, and hominy. Cover and cook over medium-low heat for about 15 minutes (longer is ok, too)!
- 4. Top with sour cream and serve!
