It’S All Greek To Me Tzatizki
- 1 whole English Cucumber
- 1 pint Good Greek Yogurt
- 2 cloves Crushed Garlic
- 1 Tablespoon Lemon Juice
- 1 Tablespoon Fresh Chopped Dill
- 1 Tablespoon Olive Oil
- 1/2 teaspoons Salt
- 1/2 teaspoons Cracked Black Pepper
- Note: prep time does not include overnight draining of yogurt and grated cucumber.
- Day one: Set yogurt to drain overnight in a paper-towel-lined sieve. Grate cucumber on a box grater and spread on paper towels to drain off as much water as possible. You want these two ingredients as dry as possible because you will be adding other liquids later.
- Day two: Place yogurt in a large bowl, add grated cucumber, and the rest of the ingredients. Mix together. Adjust spices and garlic according to your taste. My family likes a ton of garlic so we double the garlic to 3-4 tablespoons; for most folks, that will be way overkill.
- This dip is really best if you can let it sit for another day to allow the flavors to meld.
