Citrus Plantain Fritters
- FOR THE FRITTERS:
- 2 whole Ripe Plantains, Peeled
- 2 whole Limes, Juiced
- 1/2 cups Cilantro, Chopped
- 1 teaspoon Garlic Powder
- 1 teaspoon Onion Powder
- 1 teaspoon Paprika
- 1 teaspoon Pepper
- 1 teaspoon Salt
- 1 whole Egg
- 1/4 cups All-purpose Flour
- 4 Tablespoons Olive Oil
- FOR THE AIOLI:
- 1/4 cups Non-fat Plain Greek Yogurt
- 2 teaspoons Paprika
- 1/2 whole Lime, Juiced
- 1 teaspoon Garlic Powder
- 1. Preheat oven to 400 F. In a medium bowl, mash plantains with a fork or a potato masher until no large chunks remain. Add the lime juice, cilantro, spices, egg and flour. Mix together until completely combined.
- 2. In a large frying pan, add olive oil. Turn on medium high heat. Once oil is shimmering, add 1/4 cup of plantain batter per fritter into the hot oil. Each batch should consist of about 4-5 fritters so as not to overcrowd pan. Once fritters are golden brown on the bottom side (usually takes 30 seconds to 1 minute) flip them over and continue to cook on the other side until golden brown. Remove from oil and place on a large baking sheet.
- 3. Repeat with the rest of the batter (makes about 8 fritters). Once all of the fritters are done and on the baking sheet, place baking sheet in the oven for 10 minutes. Serve immediately with the aoili.
- 4. Meanwhile, make the aioli. Add the Greek yogurt to a small bowl. Add paprika, lime juice and garlic. Mix together until evenly combined. Refrigerate until ready to serve.
