Baked Cauliflower Cakes
- 1 head Cauliflower
- 2 whole Eggs
- 1/2 cups Flour
- 1/2 teaspoons Each, Salt And Pepper
- 1 Tablespoon Seasonings Of Choice (garlic, Chili Powder, Rosemary, Creole Seasoning, Hot Sauce, Etc.)
- 1/4 cups Add-ins, Such As Cheese, Green Onions, Bacon, Etc. (optional)
- 2 Tablespoons Oil
- Toppings, Optional (salsa, Chutney, Cheese, Sour Cream, Cilantro, Etc.)
- 1. Preheat oven to 400F.
- 2. Cut cauliflower into florets. Boil or steam until tender, approximately 10 minutes. Place florets in bowl and mash.
- 3. Add eggs, flour, seasoning, and add-ins. (Note: It is a good idea to first add seasoning and add-ins to the mashed cauliflower before adding the eggs and flour. This way you can taste and adjust seasoning! Start with 1 tablespoon of seasonings, and work up from there. For the add-ins, start with 1/4 cup and add more according to your tastes.) Mix until combined well.
- 4. Using a 1/2 cup measuring cup, scoop mixture into patties and place on non-stick or foil lined baking tray. Brush each cake lightly with oil.
- 5. Bake for 10 minutes. Flip cakes, brush the tops lightly with oil, and bake 10 more minutes.
