Baked Cauliflower Cakes

  1. 1. Preheat oven to 400F.
  2. 2. Cut cauliflower into florets. Boil or steam until tender, approximately 10 minutes. Place florets in bowl and mash.
  3. 3. Add eggs, flour, seasoning, and add-ins. (Note: It is a good idea to first add seasoning and add-ins to the mashed cauliflower before adding the eggs and flour. This way you can taste and adjust seasoning! Start with 1 tablespoon of seasonings, and work up from there. For the add-ins, start with 1/4 cup and add more according to your tastes.) Mix until combined well.
  4. 4. Using a 1/2 cup measuring cup, scoop mixture into patties and place on non-stick or foil lined baking tray. Brush each cake lightly with oil.
  5. 5. Bake for 10 minutes. Flip cakes, brush the tops lightly with oil, and bake 10 more minutes.
