Mediterranean Couscous Salad
- FOR THE SALAD:
- 1-1/4 cup Water
- 1 cup Uncooked Whole Wheat Couscous
- 1/2 cups Red Onion, Diced
- 1-1/2 cup Cucumber, Chopped
- 1-1/2 cup Tomatoes, Chopped
- 3/4 cups Reduced-fat Feta Cheese
- 3 Tablespoons Italian Seasoning
- 3 Tablespoons Fresh Basil, Sliced
- 1 teaspoon Garlic Powder
- Salt/pepper To Taste
- FOR THE DRESSING:
- 1/4 cups White Wine Vinegar
- 4 teaspoons Fresh Lemon Juice
- 2 Tablespoons Granulated Sugar
- 2 Tablespoons Balsamic Vinegar
- 1. In a medium sized saucepan, bring the water to a boil
- 2. Once the water is boiling, add the couscous, put the lid on and remove from the heat.
- 3. While your couscous sits, prep the veggies if you haven't already.
- 4. In a small microwave safe bowl, whisk together the white wine vinegar and lemon juice. Pop it in the microwave and heat for 10-15 seconds until warm.
- 5. Add the sugar into the warm lemon juice mixture, and stir until dissolved. Set aside,
- 6. Remove the lid from the pot, and fluff the couscous with a fork. Transfer it into a large bowl.
- 7. Add the chopped veggies to the couscous, along with the feta cheese, Italian seasoning, basil and garlic powder.
- 8. Mix until everything is combined and the Italian seasoning has been dispersed evenly.
- 9. Pour the white wine vinegar mixture over the couscous and mix well.
- 10. Season with a good amount of salt and black pepper.
- 11. Drizzle balsamic vinegar over the top and serve.
- NOTES
- This is great served warm or cold!
