Maple Pecan Cookies With White Chocolate Chips
- FOR THE COOKIES:
- 1 cup Shortening
- 1/2 cups Butter
- 2 cups Brown Sugar
- 2 whole Eggs
- 1 teaspoon Vanilla
- 1 teaspoon Maple Extract
- 3 cups Flour
- 2 teaspoons Baking Soda
- 2 cups White Chocolate Chips
- 1/2 cups Chopped Pecans

- FOR THE FROSTING:
- 1/4 cups Soft Butter
- 4 cups Powdered Sugar
- 1 teaspoon Maple Flavoring
- 3 Tablespoons Milk
- 1-1/2 cup Pecan Halves
- Directions for Cookies:
- In a large bowl; cream the shortening, butter and brown sugar. Add eggs, one at a time, beating well after each addition. Beat in vanilla and maple flavoring. Combine flour and baking soda; gradually add to the creamed mixture. Stir in white chocolate chips and chopped pecans.
- Drop by tablespoonfuls 2 inches apart onto ungreased baking sheets. Bake at 350 F for 9-12 minutes or until golden brown.
- Cool for 2 minutes before removing to wire racks.
- Frosting Directions:
- In a bowl; cream the butter, confectioner's sugar, maple flavoring and enough milk to achieve spreading consistency. Frost each cookie with 1 teaspoons of frosting; top with a pecan half.
