Sauerkraut Cake Surprise
- 1/2 c. butter or margarine
- 1 1/2 c. sugar
- 3 eggs
- 1 tsp. vanilla
- 2 c. sifted flour
- 1 (8 oz.) can (1 c.) sauerkraut, drained, rinsed and finely chopped
- 3/4 c. pecans or walnuts, chopped fine
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 c. cocoa powder
- 1/2 c. water
- 1 c. sour cream
- Cream butter and sugar until light; beat in eggs, one at a time.
- Add vanilla.
- Sift together flour, baking powder, baking soda, salt and cocoa powder; add to creamed mixture alternately with sour cream and water, beating after each addition.
- Stir in sauerkraut and chopped nuts.
- Pour into greased and floured 13 x 9-inch baking pan.
- Bake in 350u0b0 oven for 35 to 40 minutes.
- Cool in pan.
- Frost with favorite chocolate frosting.
