Soft, Chewy Chocolate Chip & Walnut Oatmeal Cookies
- 1 stick Unsalted Butter, Softened
- 1/2 cups Brown Sugar
- 1 teaspoon Vanilla Extract
- 1 whole Egg
- 3/4 cups All-purpose Flour
- 1/2 teaspoons Baking Powder
- 1 pinch Salt
- 1/2 teaspoons Ground Cinnamon
- 1/4 teaspoons Nutmeg
- 1 cup Oats
- 1/2 cups Semi-Sweet Chocolate Chips
- 1/4 cups Chopped Walnuts
- 1. Preheat oven to 350u0b0F.
- 2. In a KitchenAid mixer with paddle attachment or electric mixer, cream butter and sugar together.
- 3. Add vanilla and egg and mix on low speed.
- 4. Combine flour, baking powder, salt, cinnamon and nutmeg in a separate bowl.
- 5. Add flour mixture a little at a time on low speed.
- 6. Add oats and mix until just blended.
- 7. Stir in chocolate chips and walnuts by hand with a spoon.
- 8. Using a teaspoon or cookie dough scooper, drop rounded balls of dough on a baking sheet.
- 9. Bake for 10-12 minutes, until slightly golden brown. Do not overbake or cookies will be too hard.
- 10. Transfer to a cooling rack with a spatula.
