Soft Peanut Butter Monster Cookies

  1. Preheat oven to 350u0b0F. Combine softened butter and brown and white sugar in a stand mixer mixing bowl. Add peanut butter, egg and vanilla, followed by baking soda and flour. Do not over-mix.
  2. Add in oats, m&ms, chocolate chips and peanut butter chips. Scoop out cookies into 24 balls on parchment-lined baking sheets and press lightly to flatten.
  3. Bake for no more than 10 minutes. Allow to rest 6 minutes on baking sheets before transferring to cooling rack.
