Cajun (Sweet Dough) Pie Crust
- 1 stick margarine
- 1 c. high grade shortening
- 3 c. sugar
- 3 eggs
- 1 1/2 c. milk
- 2 tsp. vanilla extract
- 10 c. all-purpose flour plus 4 c. for kneading
- 4 tsp. baking powder
- 1 tsp. salt
- mashed canned figs, canned blackberries, syrup filling or canned pears
- Place margarine and shortening in large bowl and blend with electric mixer until creamy.
- Add sugar and continue beating until light and fluffy.
- Add eggs, one at a time, beating well after each addition.
- Add milk and vanilla and blend well by hand.
- Add the 10 cups sifted flour, baking powder and salt a little at a time until all has been blended into batter.
- Flour table or counter top generously.
- Empty dough mixture onto surface.
- Knead well.
- Measure 4 cups flour into sifter ready for use.
- If dough is too soft to roll, add more flour.
- It should be easy to handle and should not stick to the fingers.
