Cajun (Sweet Dough) Pie Crust

  1. Place margarine and shortening in large bowl and blend with electric mixer until creamy.
  2. Add sugar and continue beating until light and fluffy.
  3. Add eggs, one at a time, beating well after each addition.
  4. Add milk and vanilla and blend well by hand.
  5. Add the 10 cups sifted flour, baking powder and salt a little at a time until all has been blended into batter.
  6. Flour table or counter top generously.
  7. Empty dough mixture onto surface.
  8. Knead well.
  9. Measure 4 cups flour into sifter ready for use.
  10. If dough is too soft to roll, add more flour.
  11. It should be easy to handle and should not stick to the fingers.
