Apricot Drop Scones
- FOR THE SCONES:
- 2 cups All-purpose Flour
- 1/3 cups Sugar
- 2 teaspoons Baking Powder
- 1/2 teaspoons Baking Soda
- 1/4 teaspoons Salt
- 1/4 cups Butter, Melted
- 1 cup Vanilla Yogurt
- 1 whole Egg
- 1 teaspoon Vanilla Extract
- 1 cup Dried Apricots, Chopped

- FOR THE GLAZE:
- 1 cup Powdered Sugar
- 2 Tablespoons Milk
- 1 Tablespoon Vanilla Extract
- Preheat oven to 400 degrees.
- In a large mixing bowl, add flour, sugar, baking powder, soda and salt. Stir to combine.
- In a small bowl add melted butter, yogurt, egg and vanilla and mix well. Stir wet ingredients into dry until just combined. Fold in apricots.
- Drop by tablespoonfuls onto a greased or lined baking sheet. Bake for 10-14 minutes or until lightly browned.
- Mix the glaze ingredients in a small bowl and drizzle over warm scones.
