Greek Potato Salad (Yia-Yia’S Way)

  1. Into a large pot of boiling water add the cubed red potatoes and cook for 20-25 minutes or until fork tender. Remove from heat and drain in colander.
  2. In a mixing bowl add Greek yogurt, lemon zest and juice, diced onion, salt, pepper, Greek olive oil, Greek oregano, and mint. Using a spatula mix well. Add cooked potato cubes and gently mix together.
  3. Add feta cheese crumbles to the top and cover with plastic wrap and chill 2-3 hours before serving, for best results.
  4. I can never eat just one helping-I love this dish! Enjoy!
