Greek Potato Salad (Yia-Yia’S Way)
- 1 bag (5 Pound Size) Red Potatoes (Rinsed, Peeled And Cubed)
- 2 cups Greek Yogurt
- 1 whole Lemon (for Zest And Juice)
- 1 whole Large Onion, Diced
- 1 teaspoon Sea Salt
- 1/2 teaspoons Black Pepper
- 2 Tablespoons Imported Greek Olive Oil
- 3 Tablespoons Greek Oregano
- 1 leaf Fresh Mint, Finely Chopped
- 1-1/2 cup Feta Cheese Crumbles
- Into a large pot of boiling water add the cubed red potatoes and cook for 20-25 minutes or until fork tender. Remove from heat and drain in colander.
- In a mixing bowl add Greek yogurt, lemon zest and juice, diced onion, salt, pepper, Greek olive oil, Greek oregano, and mint. Using a spatula mix well. Add cooked potato cubes and gently mix together.
- Add feta cheese crumbles to the top and cover with plastic wrap and chill 2-3 hours before serving, for best results.
- I can never eat just one helping-I love this dish! Enjoy!
