Apple And Oat Bran Muffins

  1. In medium bowl, stir flour, oat bran, brown sugar, baking powder, baking soda, salt, nutmeg and cinnamon.
  2. In small bowl, combine buttermilk, egg whites and oil.
  3. Add to dry ingredients and stir just until moistened.
  4. Stir in apple.
  5. Store batter in refrigerator tightly covered for up to 5 days.
  6. Spray muffin pans. Spoon about 1/4 cup batter into each. Bake at 375u0b0 for 18 to 20 minutes or until done.
  7. Yields 12.
