Apple And Oat Bran Muffins
- 1 1/4 c. whole wheat flour
- 1 c. oat bran
- 1/3 c. packed brown sugar
- 2 1/2 tsp. baking powder
- 1/4 tsp. baking soda
- 1/4 tsp. salt
- 1/4 tsp. nutmeg
- 1 c. buttermilk
- 2 egg whites
- 2 Tbsp. cooking oil
- 3/4 c. shredded, peeled apples
- nonstick spray
- 1/4 tsp. cinnamon
- In medium bowl, stir flour, oat bran, brown sugar, baking powder, baking soda, salt, nutmeg and cinnamon.
- In small bowl, combine buttermilk, egg whites and oil.
- Add to dry ingredients and stir just until moistened.
- Stir in apple.
- Store batter in refrigerator tightly covered for up to 5 days.
- Spray muffin pans. Spoon about 1/4 cup batter into each. Bake at 375u0b0 for 18 to 20 minutes or until done.
- Yields 12.
