Sour Cream Cookies
- 3-1/2 cups Flour
- 1-1/2 teaspoon Baking Powder
- 2 Eggs
- 1-1/2 cup Sugar
- 1 teaspoon Vanilla Sugar
- 3-1/2 ounces, weight Butter
- 7 ounces, weight Sour Cream
- 2 Tablespoons Coconut Flakes
- Mix the flour and baking powder in a large deep bowl. Beat the eggs with both sugars in a smaller bowl. Melt the butter and add to the egg-and-sugar mixture. Add the sour cream, stir well and slowly pour mixture into the flour. Knead pastry and let rest in the fridge for 2 hours.
- After 2 hours, take the pastry from the fridge and place on a floured table. Roll pastry out into a 4-5mm thick layer. Sprinkle the layer with coconut flakes and press a bit with your hand so that the coconut flakes stick and won't fall off after baking.
- Cut out cookies with cookie cutters. Put cookies on a greased baking sheet. Bake at 350u0b0F (180u0b0C) for 15 minutes.
