Asparagus Casserole
- 2 (10 oz.) pkg. frozen whole asparagus spears
- 2 Tbsp. butter
- 2 Tbsp. flour
- 1/4 tsp. salt
- 1/4 tsp. nutmeg
- few grains pepper
- 2 Tbsp. butter, melted
- 1 c. undiluted milk
- 1/2 c. water
- 4 sliced, hard-cooked eggs
- 1/2 c. shredded process American cheese
- 1/2 c. soft bread cubes
- Cook asparagus according to package directions; drain well. Melt butter in saucepan over low heat.
- Stir in flour and seasonings.
- Slowly add milk and water.
- Cook until mixture thickens, stirring constantly.
- Arrange half of asparagus in buttered 2-quart baking dish.
- Place half of eggs, cheese and sauce over asparagus.
- Repeat layers.
- Combine butter and bread cubes; sprinkle over top of casserole.
- Bake in moderate oven (350u0b0) for 20 minutes.
- Makes 6 servings.
