Slap Your Mama Muffins
- FOR THE MUFFINS:
- 1-1/2 cup All-purpose Flour
- 1/2 teaspoons Baking Soda
- 1/2 teaspoons Baking Powder
- 1/2 teaspoons Salt
- 1 stick Softened Butter (I Used Regular, Salted)
- 2/3 cups Granulated Sugar
- 2 whole Eggs
- 1/2 cups Orange Juice
- 1 teaspoon Vanilla Extract
- 1/2 cups Fat Free Banana Yogurt

- FOR THE GLAZE:
- 1/2 cups Orange Juice
- 1 cup Brown Sugar
- Preheat oven 350 degree.
- Stir together dry ingredients
- For the wet ingredients:
- I did all of this by hand, and I feel like that is what made them so light and fluffy. So, whisk the soft butter with the sugar until fluffy. Add 1 egg at a time, mixing well after each addition. Add vanilla, yogurt and 1/2 cup orange juice. Mix until combined (no more white crumbles). Put in muffin cups WITHOUT liners! I made the mistake of using them and they blocked my glaze. Bake at 350 degrees for about 12-15 minutes until they are set, but not browned.
- When they are out of the oven, mix together the brown sugar and remaining orange juice and then, pour over those warm, amazing cupcakes/muffins.
