Fresh Pineapple Cake With Ice Cream And Caramel Sauce

  1. 1. Preheat oven to 350F. Coat a 9 x 13" pan with cooking spray, set aside.
  2. 2. In a large mixing bowl, add flour, sugar, salt, baking powder, baking soda, and cinnamon; mix well. Make a well in center and add the rest of the cake ingredients.
  3. 3. Mix until well blended; do not over mix. Pour into the pan and bake for 45 minutes. When a toothpick or cake tester comes out clean, it's done. Cool completely. Serve with a scoop of vanilla ice cream and a drizzle of caramel sauce. Garnish with a sprig of mint and finely diced pineapple.
