Fresh Pineapple Cake With Ice Cream And Caramel Sauce
- FOR THE CAKE:
- 2-1/4 cups Flour
- 1-3/4 cup Sugar
- 1 teaspoon Salt
- 1 teaspoon Baking Powder
- 1 teaspoon Baking Soda
- 2 teaspoons Ground Cinnamon
- 4 whole Eggs, Beaten
- 3/4 cups Vegetable Or Canola Oil
- 3/4 cups Pureed Fresh Pineapple, Or Finely Minced
- 1 cup Pineapple, Finely Diced

- TO SERVE:
- Vanilla Ice Cream
- Caramel Sauce From A Jar
- Finely Diced Pineapple For Garnish
- Fresh Mint For Garnish
- 1. Preheat oven to 350F. Coat a 9 x 13" pan with cooking spray, set aside.
- 2. In a large mixing bowl, add flour, sugar, salt, baking powder, baking soda, and cinnamon; mix well. Make a well in center and add the rest of the cake ingredients.
- 3. Mix until well blended; do not over mix. Pour into the pan and bake for 45 minutes. When a toothpick or cake tester comes out clean, it's done. Cool completely. Serve with a scoop of vanilla ice cream and a drizzle of caramel sauce. Garnish with a sprig of mint and finely diced pineapple.
