Chewy Chocolate Fudge Cookies With Peppermint Glaze
- FOR THE COOKIES:
- 1/4 cups Butter, Softened
- 1/4 cups Canola Oil
- 1/2 cups Brown Sugar
- 1/4 cups Sugar
- 1 whole Egg
- 1 teaspoon Vanilla Extract
- 3/4 cups Grated Zucchini, Excess Water Squeezed Out
- 1/2 cups Unsweetened Cocoa Powder
- 3/4 teaspoons Baking Powder
- 1/4 teaspoons Baking Soda
- 1/2 teaspoons Salt
- 1 cup All-purpose Flour

- FOR THE GLAZE:
- 3/4 cups Powdered Sugar
- 2 Tablespoons Milk
- 1/2 teaspoons Peppermint Extract
- 3 dashes Red Sprinkles
- 1. Whip butter, oil and sugars together until fluffy, 2 minutes.
- 2. Mix in egg, vanilla and grated zucchini.
- 3. Carefully mix in all dry ingredients until incorporated.
- 4. Scoop onto greased cookie sheet and bake 7-9 minutes at 350.
- 5. For the glaze, mix powdered sugar, milk and peppermint extract together in small bowl until smooth in consistency. You may need to add more milk to get your desired consistency.
- 6. Spread glaze over cookies and top with sprinkles.
