Shirley'S Beans(Low-Fat, Low Cholesterol)
- 1 (2 lb.) bag red beans
- 1 large yellow onion, chopped
- 1 or 2 chopped, deseeded jalapenos
- 1 or 2 carrots
- 1 or 2 Tbsp. brown sugar or honey (optional)
- 1 or 2 Tbsp. chili powder
- 1/2 tsp. salt
- 2 or 3 dashes red pepper (optional)
- 2 or 3 garlic toes (whole)
- Soak beans overnight; drain and cover with fresh water.
- Bring beans to boil; reduce heat.
- Add onion, jalapeno, brown sugar, chili powder, salt, red pepper and garlic.
- Cook for about 1 hour. While cooking, cut carrots into very small bite size pieces.
- Cook for 30 minutes more.
- Remove garlic toes and serve over steamed rice.
- I also add 1 link of Healthy Choice smoked sausage (chopped) when I add the carrots.
- Makes a very healthy, tasty meal.
