Shirley'S Beans(Low-Fat, Low Cholesterol)

  1. Soak beans overnight; drain and cover with fresh water.
  2. Bring beans to boil; reduce heat.
  3. Add onion, jalapeno, brown sugar, chili powder, salt, red pepper and garlic.
  4. Cook for about 1 hour. While cooking, cut carrots into very small bite size pieces.
  5. Cook for 30 minutes more.
  6. Remove garlic toes and serve over steamed rice.
  7. I also add 1 link of Healthy Choice smoked sausage (chopped) when I add the carrots.
  8. Makes a very healthy, tasty meal.
