Blueberry Banana Chia Streusel Muffins

  1. Preheat your oven to 375 F. Line standard sized muffin tins with 18 baking cups.
  2. In a large bowl beat butter, applesauce and brown sugar until fluffy. Add bananas, milk, vanilla and eggs; mix well.
  3. Add the flour, baking powder, baking soda and salt; stir just until dry ingredients are moistened. Gently stir in blueberries. Divide batter between 18 muffin cups.
  4. In a small bowl combine flour, brown sugar, cinnamon and chia seeds. Using a fork, cut in butter until mixture is crumbly. Sprinkle the streusel over the batter.
  5. Bake at 375 F for 20 minutes or until a toothpick inserted in the center comes out clean.
