Mini Strawberry Chocolate Chip Muffins
- 1-1/2 cup All-purpose Flour
- 1/2 teaspoons Baking Soda
- 1/2 teaspoons Cinnamon
- 1/4 cups Granulated Sugar
- 1/4 cups Light Brown Sugar
- 1/2 cups Plus 2 Tablespoons Plain Greek Yogurt
- 1 Large Egg, Beaten
- 2/3 cups Fresh Strawberries, Diced
- 1/3 cups Mini Chocolate Chips
- Preheat the oven to 350u0b0F. Spray a mini muffin pan with nonstick spray.
- In a large bowl, whisk together the flour, baking soda and cinnamon. In another bowl, whisk together the sugars, yogurt and egg until completely combined.
- Add the wet ingredients to the dry and stir until just combined. Gently mix in the strawberries and chocolate chips.
- Fill the muffin tin with batter, dividing evenly between the 24 muffin cups. Bake for 15 minutes until a toothpick inserted in the center comes out clean.
