Blueberry Chocolate Chip Banana Oat Bread
- 1 cup Mashed Bananas (for 1 Cup You'll Need About 2 Medium Bananas)
- 1 cup Buttermilk
- 2 Large Eggs
- 1/2 cups Lightly Packed Brown Sugar
- 1/3 cups Canola Oil
- 1 cup Whole Wheat Flour
- 1 cup All-purpose Flour
- 1 cup Old Fashioned Rolled Oats
- 2 teaspoons Baking Powder
- 1 teaspoon Cinnamon
- 1/2 teaspoons Salt
- 1/4 teaspoons Baking Soda
- 1 cup Blueberries
- 1/2 cups Chocolate Chips
- Preheat the oven to 375 F. Lightly spray a 9x5 inch loaf pan with cooking spray and set aside.
- Put the mashed bananas into a medium sized bowl. Whisk in the buttermilk, eggs, brown sugar and oil until well combined.
- In a large bowl, toss together the whole wheat flour, all-purpose flour, rolled oats, baking powder, cinnamon, salt and baking soda. Pour in the wet ingredients and stir until just combined. Gently fold in the blueberries and chocolate chips.
- Pour batter into the prepared pan and bake for 50 minutes to 1 hour, or until browned and a toothpick inserted in the center comes out clean. Remove from oven. Cool in the pan for 15 minutes, then remove to a wire rack to cool completely.
