Mini Blueberry And Grape Pancakes
- 1 cup Buttermilk Pancake Dry Mix (Your Favorite Brand)
- 2/3 cups 2% Milk
- 1 cup Blueberries
- 1/2 cups Seedless Green Grapes, Halved
- 2 teaspoons Maple Syrup, Divided
- 2 teaspoons Unsalted Butter, Divided (optional)
- 1. Preheat a skillet on low/medium heat and lightly grease it with butter or non-stick spray.
- 2. Mix pancake mix and milk in a bowl and whisk until smooth.
- 3. Add blueberries and grapes and whisk until smooth.
- 4. Use a 1/2 cup measuring scoop and pour batter into skillet, leaving space between each pancake.
- 5. Turn pancakes with a spatula when edges look cooked, after about two to three minutes. Turn only once. Repeat and cook the bottom side until browned to your liking. Remove cooked pancakes to a plate and repeat with the remaining batter.
- 6. Place pancakes onto plates. Recipe should make 3 mini pancakes each. A add maple syrup and butter if desired.
- 7. Enjoy!
