Bishop Bread
- 1 1/2 c. cut up dates
- 1/2 c. brown sugar
- 1 Tbsp. soft shortening
- 1 egg
- 2 1/4 c. flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 c. black walnuts
- 1 pkg. chocolate chips (6 oz.)
- 18 maraschino cherries, cut in pieces
- Pour 1 1/2 cups boiling water over 1 1/2 cups dates and cool. Mix brown sugar, shortening and 1 egg.
- Stir this into the date and water mixture and mix well.
- Sift flour, soda and salt together and add to date mixture.
- Add walnuts, chocolate chips and cherries.
- Batter will be very stiff.
- Put in regular size loaf pan and let stand 20 minutes before baking about an hour at 350u0b0.
- Other nuts may be used but black walnuts give it a very distinctive taste.
- Makes a wonderful Christmas treat.
