Grandma Colnar’S Nut Roll
- FOR THE FILLING:
- 2 pounds Walnuts, Finely Ground
- 3/4 cups Whole Milk
- 3/4 cups Unsalted Butter
- 3/4 cups Plus 1 Teaspoon Honey

- FOR THE DOUGH:
- 3/4 cups Whole Milk, Scalded
- 1 Tablespoon Active Yeast
- 2 Tablespoons Sugar
- 4 cups Flour
- 2 sticks Unsalted Butter, Chilled
- 4 whole Egg Yolks, Unbeaten
- 1 teaspoon Salt
- Nut mixture:
- Warm the milk. Add honey, butter, and vanilla. Mix with the ground nuts.
- To make the dough:
- Add yeast into warm milk (scalded). Add sugar and let stand until bubbly. This will take about 5 minutes.
- Cut cold butter into flour and salt until completely integrated. Make a well and drop the unbeaten egg yolks in, then the yeast mixture. Knead until the dough comes easily off your hand (this will not take more than a minute or two). Cover with a towel and allow to rise for 1 hour.
- Divide dough into 4 equal parts. Working one part at a time, roll out on a lightly floured surface to a rectangular shape the thickness of a pie crust (between 1/8th and 1/4 inches). Spread on 1/4 of the nut mixture.
- Roll up loosely (it should be flatter than it is round) and place seam side down on an ungreased cookie sheet. Cover and let rise for 1 to 1 1/2 hours.
- Bake at 375F for 30-35 minutes.
