Soycutash Salad With Creamy Avocado Lime Dressing
- FOR THE SALAD:
- 2-1/2 cups Trader Joe's Frozen Soycutash (thawed) Or Similar Amount Of Frozen Of Edamame, Corn And Red Bell Pepper (thawed)
- 1 whole Tomato, Seeded, Diced
- FOR THE DRESSING:
- 1/4 cups Avocado
- 1 teaspoon Lime Juice
- 2 Tablespoons Greek Yogurt, Plain
- 1/2 teaspoons Chipotle In Adobo Sauce (more To Taste)
- 1/2 teaspoons Garlic Powder
- 1 teaspoon Milk To Thin Out)
- 1/4 teaspoons Salt
- 1/4 teaspoons Pepper
- In a medium sized bowl, add the Soycutash and tomatoes; set aside.
- To make dressing: In a blender, add avocado, lime juice, Greek yogurt, chipotle in adobo sauce and garlic powder. Process until smooth. To thin out the dressing, add milk about a teaspoon at a time and blend. Add salt and pepper to taste.
- Pour dressing over vegetables, and refrigerate until ready to serve.
