Spaghetti & Meatball Cake
- 2-1/2 cups Flour
- 1 cup Cocoa Powder
- 1-1/2 teaspoon Baking Soda
- 1/2 teaspoons Baking Powder
- 1/2 teaspoons Salt
- 1 cup Butter, Softened
- 1-3/4 cup Sugar
- 3 whole Eggs
- 1-1/4 teaspoon Vanilla
- 1-2/3 cup Milk
- 1 cup Butter, Softened
- 1 cup Shortening
- 2 pounds Confectioners Sugar
- 1 Tablespoon Vanilla
- 2 Tablespoons Milk, To Desired Consistency
- 2 drops Yellow Food Coloring
- 1/2 teaspoons Cocoa Powder
- 1/2 cups Pureed Sugared Strawberries
- 1 Tablespoon Grated White Chocolate
- Mix flour, cocoa, baking soda, baking powder and salt.
- In a mixing bowl cream butter, sugar, and eggs. Add vanilla and milk. Gradually add in the dry ingredients.
- Bake at 350F in two 9" (greased and floured) cake pans for about 30 minutes or until done.
- While the cake is baking, mix the butter, shortening, confectioners sugar, vanilla, and milk for the icing.
- Color about 1 cup of the icing yellow, then stir in 1/2 teaspoon cocoa powder to make it spaghetti colored. Leave the rest of the icing white.
- Cool cakes. Use one of the cakes as the meatballs. Crumble the cake with your hands and form meatballs. The cake should be moist enough to form "meatballs". If it is not, spray with just a little water to make it stay together.
- Frost other cake white using the white frosting. Place the cake "meatballs" where you want them. With a round tip and the yellow frosting, pipe spaghetti around the meatballs and all over the cake, using a figure 8. Drizzle the meatballs with the pureed strawberry mixture. Grate some white chocolate on top to look like cheese.
