French Toast Casserole

  1. Lightly spray a pan with nonstick cooking spray. Line the bottom of the pan with bread cubes. In a large bowl, beat together eggs, milk and 2 tablespoons of the sugar (or Splenda). Pour the egg mixture over the bread. Dot with butter; let stand for about 10 minutes before placing in the oven. For a better flavor, cover and refrigerate overnight. In the morning, or after 10 minutes, mix the remaining sugar and cinnamon in a bowl and sprinkle over the top. Bake in a preheated 350-degree oven for 45-50 minutes or until the top is golden. Top with a light layer of agave nectar or pure maple syrup.
  2. This recipe can easily be halved. If halving recipe, use an 8x8 inch pan. It will serve 4-6 people. A larger serving will feed 6-8 people.
